Wrap it Up: 4-Ingredient Hot Lunch

I don’t know what to call them. Vegan Roll-ups? How about Whatever-You-Want-to-Put-in-There Wraps? Four ingredients and myriad ways to customize will give you a tasty vegan meal for work, a picnic, or for throwing at the kids in the back seat on the way to the endless activities.

  • 2 containers Pilsbury Original Crescent Rolls*
  • 1/2 container or 4oz Go Veggie Chive & Garlic Cream Cheese Alternative
  • 1 pkg meatless tenders or strips such as Beyond Chicken Homestyle Tenders, cooked and finely diced/chopped
  • 1 c fresh finely chopped/torn spinach or other vegetables.

*The “original” crescent rolls do not list any dairy ingredients, although they still aren’t exactly healthy.


Cook and prepare the meatless strips or tenders. Alternately, use a can of drained chickpeas.

Preheat the oven to temp recommended on crescent roll can (375). Combine the cream cheese, spinach, and tenders in a bowl. Unroll the crescents so that you have squares (two triangles). Press the seam closed. Mound some of the mixture in the center and wrap the dough from opposite corners to form a pocket.


2 cans and the mixture make 8 pockets. Place on a baking pan and bake for 12-15 minutes or golden brown.


Substitute beans, grains, other meatless products, vegetables, and whatever seasonings. It’s a great recipe for using up leftovers.
